Oysters Rockefeller


24 fresh oysters
500 g (2 cups) of salted butter at room temperature
70 ml (1/3 cup) white wine or pastis
125 g (1/2 cup) wheat or panko breadcrumbs
1 bunch of parsley
1 tarragon boot
1 bunch of green onions
1 cup celery leaves
Chilli pepper sauce (Tabasco or other) to taste
Grated hard cheese to taste (parmesan, cheddar, local product - choose your favorite!)

Finely chop parsley, tarragon, celery and green onion and put in a large bowl. Add butter, panko or breadcrumbs, alcohol, hot pepper sauce and salt and mix well. Open the oysters and place them on a baking sheet previously covered with coarse salt. Place one tablespoon of the preparation on each oyster. Sprinkle with cheese. In an oven grill, cook for about 5 minutes or until the cheese and butter are browned.

1 lobster (1 1/4 lb.) cooked * save the cooking liquid 
3 tomatoes, cut into large dices
1 large onion, chopped
4 garlic cloves, finely chopped
1/2 cup olive oil
1 lb. of cooked potatoes
1/3 cup finely chopped fennel leaves
1/4 teaspoon of saffron nails
2 tablespoons sea salt
1/2 teaspoon pepper
9 cups fish broth
3 lb of white-fleshed fish fillets
1/2 lb. clams in their shells
1/2 lb. mussels in their shells 
1/2 lb. shrimp

Remove the lobster claws, as well as the joint between the claw and the body. Cut the body and tail in half and cut the flesh into 2-inch pieces. Cook tomatoes, onion and garlic until onion is tender. Peel the potatoes and cut into 1/2 inch cubes. Add these to tomatoes with fennel, saffron, salt and pepper. Add the broth and boil, then simmer covered until the potatoes are cooked. Add the fish and clams and simmer for 2 minutes. Add the mussels, shrimp, lobster meat and cooking juices. Simmer for about 5 minutes, until the mussels open. Serve with hot croutons.

Baked Lobster


2 freshly boiled lobsters
1/3 cup margarine or melted butter
1 tablespoon dry white wine
Chopped parsley
1 cup Ritz crackers finely ground
1 1/2 tablespoon of Worcestershire sauce

1/2 tablespoon paprika

Choose lobsters from 1 1/4 to 1 1/2 lb. (split and cracked). Heat the oven to 375 ° F. Remove all green liver from lobsters; mash and set aside. Place the lobsters, split side up, in a large baking dish. In a bowl, mix bread crumbs, 1/4 cup melted butter, Worcestershire sauce and white wine. Add the green liver. Pour the mixture delicately into the cavities of the lobster. Sprinkle the exposed lobster meat with a little melted butter. Cook uncovered for 35 to 40 minutes. Sprinkle with paprika and parsley. Serve with the remaining melted butter.

1 lb cracked crab meat
1 egg
1 1/2 tablespoon breadcrumbs
2 teaspoons chopped fresh parsley
1 1/2 tablespoon mayonnaise
1/2 tsp dry mustard
Spicy Chilli Sauce to taste (Tabasco or other)

Preheat the oven grill. Combine crabmeat, bread crumbs, parsley, salt and pepper. Beat egg, mayonnaise, hot sauce and dry mustard. Mix well with other ingredients and form patties. Place on a lightly oiled baking sheet. Grill until the patties are golden brown.

Chilean Bar with Lemon Dill Sauce


3/4 cup white wine

2 garlic cloves finely chopped
1 French shallot, finely chopped
3 tablespoons lemon juice
3 tablespoons butter
2 tablespoons fresh dill, finely chopped
2 tablespoons of capers
2 tablespoons vegetable oil
2 lb of filleted Chilean bar

Salt and pepper

Preheat oven to 450 ° F. Bring the wine, garlic, shallot and lemon juice to a boil in a saucepan. Reduce to 1/3 cup. Add butter, simmering over low heat. Remove from heat and add half the capres and dill. In a baking pan, heat the oil and sear the bar for 3 minutes on each side. Bake for 5 minutes until the fish is cooked. Serve with the sauce and the remaining capers and dill.

Salted Cod Casserole

1 lb of salted cod
6 large potatoes, peeled
6 eggs
1 broccoli head cut in 4
2 large onions, chopped

Freshly ground black pepper

A little olive oil

Soak salt cod in water overnight. Drain. Place cod, potatoes, eggs with their shells and broccoli in a large saucepan. Cover with water and bring to a boil. Cook until potatoes are tender; drain. Brown the onions. Slice the potatoes. Peel and slice the eggs. Cut the broccoli into small pieces. In a baking dish of 13 x 9 inches, arrange the ingredients in layers, starting with the fish. Bake at 350 ° F for 20 minutes.
